Goodbye Chimayo and Redemption Salad

Last week I had a final Redemption Salad made by Bill.

Our kids grew up playing on Eastsound Beach (as I call it), not far from Chimayo in the basement of the Odd Fellows building. Many a summer afternoon was characterized by catching small crabs, exploring Indian Island’s low-tide creatures, and meandering over to Chimayo to quell the hunger spell with some Kid Burritos – one of the only quick take-out meals you could find that didn’t break the bank before venturing out to explore again.

We have years of memories walking down this hall, which conjures feelings of sunshine, sand, saltwater hands, and endless summer days…

  2. What’s happening to Chimayo and where is Bill headed?

    • Bill said the Co-op, which is in charge of the building, asked the current businesses to move out for the time being in order for painting, repairs, and upgrades. Then if they would like to come back, they need to reapply, which will be a higher rent that isn’t as doable. Hopefully I am quoting Bill correctly.
