Inspired by a Pink Cupcake

Yesterday I was running into the Island Market to get some dinner greens. In front of the store was a mouth-watering spread of goodies to raise money for 3rd-8th graders from Orcas Christian School for their end-of-the-year trip to Victoria. It’s a common thing here on the island to walk up to the store and see a manned spread of good-lookin’ sugar for a worthy cause.

I have this thing for pink frosting. I didn’t grow up having sweets very often, and once in a blue moon we’d stop at the donut shop after church. I’d either get the blueberry donut with clear glaze or the one with the pink frosting.

I didn’t realize how hungry I was last night until I spotted the beautiful, light pink, homemade buttercream frosting made with fresh strawberries atop lemon cupcakes. I loaded up my bike basket with various selections and ate the pink cupcake right off the bat. It was perfection. (Way to go, Mrs. K. and Miss Angie.)

Restraint doesn’t normally flee from me, but last night it was gone. I then sampled the apple strudel muffin and the no-bake peanut butter chocolate chip oat bar. Best dinner ever.

I went in the store totally derailed, came right back out for more cupcakes for our boys, and headed home with a basket of bouncing confections.

Even once at home, that pink frosting still had me in its grip, and I decided to grab my camera and ride back down – a good excuse to be out in the beautiful evening a little longer on my bike, and a way to enjoy more goodies without having to actually eat them.

The next sweet wonders and professional cupcakes from OCS will be in front of the store on May 17th from 2-6 PM.
